A highly sought-after television and stills food stylist, Robert Carmack divides his time between Australia, Thailand, and the United States. Known professionally as The Globetrotting Gourmet, he writes widely on food and travel for magazines around the world, and is author of Thai and Vietnamese cookbooks, all translated into international editions. He also edits the tgtgNewsletter for his website The Globetrotting Gourmet. Heribert Gaksch has been involved in food and hospitality all his life, as his parents owned a small summer and winter resort in Germany’s Bavarian Alps. There, he apprenticed in its bakery, before foraging overseas to specialize in the international hotel industry, and later in-flight meal services. He is former general manager of the Tawana Ramada hotel in Bangkok, and currently GM of the Hospitality Division of PB Partners, overseeing super-deluxe Phulay Bay Resort in Krabi, and PB Valley Estate in Khao Yai. Heribert was born Austria, grew up in Germany, and considers Thailand his permanent home since 24 years.

Associate Professor Pagorn Kunarak is an Isan scholar. His latest book is The Classic of Isan Food with previous collections in scholarly journals “The Isan Ways of Life" After graduating with a BA from Mahasarakam University, he achieved his Masters from Chulangkorn University, and worked for the Centre of Southeast Asian Studies. He is an active member of the Chula Isan Club at Chulankorn University in Bangkok. Arjan Pagorn was born in Roi Et, currently lives in Khon Kaen, and is retired.

Burin “Jobe” Nakcharoen began his serious involvement in oenology after joining the wines section of Italthai in the early 1990s. This led to stints in both France and the US, after which he became a certified sommelier. Upon return to Thailand, Kh Jobe was involved in selecting and supplying wines of distinction for Thailand’s leading hotel chains. Fluent in five languages, with degrees from England, Japan, US, Australia and Thailand, he was a former advisor to government ministries including that of the Prime Minister. Kh Prayut comes with a pacesetting pedigree, as Thailand’s first native-born winemaker. He received his Bachelors degree in the Faculty of Agro Industry, Department of Food Science and Technology at Chiang Mai University in 1993, followed by a career with Boonrawd Brewery Co., Ltd. There, he realized his passion was in winemaking, and in 1996 he was sent to Germany to further his education while the Khao Yai Winery was being established. In 1998, he graduated in Viniculture and Oenology at Lehrund Versuchsanstalt fuer Weinbau und Obstbau Weinsberg (LVWO). Upon returning to Thailand he was appointed manager of Khao Yai Winery (PB Valley).

Morrison Polkinghorne hosts specialized food and textile tours throughout Southeast Asia.
He has written widely on travel, including the food and drinks chapter of Lonely Planet's Greater Mekong edition, covering 5 southeast Asian regions; and a contributor to the book To Myanmar with Love, and on Isan textiles for TAT Newsroom. By trade he is a textile designer, and authority on hand-loom weaving techniques. His company, Passementeries, exports world-wide, and he also represents prestige interior designers. Young and dynamic Chokchai Saensimon, 34, hails from Khon Kaen and Roi Et in Isan. He worked previously at The Landmark, Amari Atrium, The Regent, and Four Seasons hotels in Bangkok, plus a stint in Germany at Ploy Talay. He started at Jim Thompson in 2004, first as a sous chef, then opened the Jim Thompson Restaurant in Singapore in ‘09, and is now executive chef at the company’s showcase Bangkok restaurant. Jim Thompson silk personifies Thai style, showcased first through its founder’s original teak house, then later museum, art centre and now a chain of international Thai restaurants.

Joolpeera “A” Saitrakul heralds from Hat Yai in Thailand’s deep south, but is now firmly ensconced in Khao Yai as PB Valley Estate's second winemaker. He received his oenology degree at the University of Canterbury, having lived in New Zealand for nearly 10 years working in celebrated Antipodean wineries. He is 27.
