| Welcome to Thailand, the Land of Smiles, and to Bangkok, The City of Angels. You will be met personally at Bangkok's new Suvarnabhumi airport and transferred directly to the 5-Star Sofitel Centara Grand Bangkok for a VIP welcome, guaranteed deluxe upgrades, and presented with a floral greeting. As flight arrival times vary today, there is nothing specifically planned today or this evening, although we will contact you all personally to welcome you. |

| Meet us for a group breakfast, then transport to the domestic Don Mueang airport -- it is conveniently located nearby! Light lunch on board, but save room, as our first full day in Thailand continues with a "progressive lunch" of Isan specialties. |
| Welcome to Khon Kaen, population 200,000, and Isan's largest city. Lying at the geographical heart of Thailand's sprawling northeast plateau, Isan is renowned for both its foods and silk textiles. Out hotel, The Sofitel Raja Orchid, is host for the Thai Cuisine Masterclass weekend. This 5-star hotel is the city's finest, and perfectly located in the city center. |
Our first stop: Isan's famous meats, including sun dried moo dad deo, cyclo Isan sausages, and tart and fiery larb minced meat salads. All served with traditional sticky rice. Next, eat at one of the city's most famous gai yang eateries -- a humble roadside affair selling delicious grilled baby chicken, plus crisp and quenching green papaya salad. Then it’s a quick stop at the Khon Kaen museum to view their exhibit of Isan daily life, and finally, we tracked down Khon kaen's best tea and coffee stall. Here, we'll introduce you to traditional cha (tea) and café boran, brewed through a sock like filter. The tea is surprisingly orange colored, and all heavily sweetened with treacly condensed milk. After check in, you will have time to freshen up and rest, or briefly acquaint yourself with the vicinity. Meet up in the evening for the official launch of the Isan Food Festival Masterclass Weekend, complete with Thai wines and local snacks. Then you are on your own. There are seven different restaurant venues on premises, from German to Italian, Thai, Vietnamese and Chinese, plus an in-house brewery. And if that's not enough, numerous hawker stalls sit just outside, plus nightclubs and discotheques. |

Today's activities center around the weekend masterclass program, and includes a public lunch at the hotel, plus a private dinner for our tour group. |
| Morning markets in Thailand open traditionally at dawn, ensuring that perishables sell well before the hot sun peaks. Our hotel chef is ready to meet our group bright and early, to escort us to nearby shopping. Bring your walking shoes, as we explore the delicious varieties of Isan cooking. The chef will explain the local ingredients, and show us the best kitchen wares, such as which are the quality sticky rice steaming baskets compared to cheap manufactured ones. |
| In the evening, we regroup for an Isan Paleng dinner, traditional Isan style around a low-lying table with multiple courses, followed by a tour of the city's night market. |

| We also repeat our optional morning market tour again this morning. This is your chance to ask niggling questions from the day prior, or to be bold and brave tasting local market foods, or simply for last minute shopping. In the evening, we regroup at one of Khon Kaen's best seafoodrestaurants, along the busy lake front. The district literally pulses with nightlife, and afterward returning to the hotel -- or we drop you off at the city's night market, making your own way back to the hotel. |

Following your Masterclass weekend, discover Isan's Khmer heritage -- the largest congregation of Khmer temples outside of Cambodia. Also see the region's famous matmee silk weaving. We have a lot to visit today, including silk villages, cobra boxing (in a village also famous for its home-grown herbs) and 800 year old temples! The Unesco-heritage listed stucco paintings of Wat Baan Lan are not to be missed. We'll also stop for what is reputedly Isan's best gai yang grilled chicken. |

Today we say goodbye to Isan, as we fly back to Bangkok, then drive south, passing the kingdom's dessert capital of Phetchaburi. We'll stop for a light lunch, then explore Phetchaburi's exquisite Khao Wang, a former royal residence built high on hill. The surrounding is a virtual forest of frangipani inhabited by dozens of overly friendly monkeys. before reaching the luxury resort of Hua Hin. Official summer residence for Thai royalty, our accommodation today is at the Sofitel Centara, formerly known as the Railway Hotel. It has been lovingly resorted to its colonial grandeur, and its grounds boast exquisite topiary plus a maze, with a setting smack on the beach. You are on your own this evening, but for those interested, we'll host a walking tour to the town's night market. |

| After breakfast, the morning is for personal exploration around Hua Hin. Or relax around one of the hotel's three swimming pools, or lay along the beach. Lunch not included. At 3 p.m. we gather for a special cooking demonstration of southern Thai regional dishes, and an early dinner of all the foods we've prepared. If you're still hungry, we'll show you where to get the best khao nieow mamuang mango and sticky rice dessert. Our treat! Remaining evening free. |

| We check out late this morning -- time for one last ocean dip. Enroute we'll stop for a midday coffee and fresh khanom mo kaeng crushed mung bean custard -- a specialty of Phetchaburi. We'll also stop at a palm and date sugar plantation, tasting the sap and nibbling at the hard sugar loafs, plus briefly view the colorful beauty of the Damnoen Saduak floating markets, which sadly have become more touristy than authentic. |
| In the afternoon, we're welcomed back to the Sofitel Centara Grand Bangkok. You'll receive a dinner voucher for the Chatuchak Buffet this evening -- a truly sumptuous spread, and the remaining evening is on your own. |

BANGKOK TRANSPORT: Our hotel and mall are linked directly to the new MRT subway, and a short $1/35 Baht taxi fare to the nearby BTS Skytrain. (There is also a free hotel shuttle to the Skytrain, or alternatively, take the MRT one stop and connect.) These easy-to-use transport options are a god-send in Bangkok, and should be used especially during peak hour periods. Our hotel also offers a complimentary shuttle bus into town several times daily, with drop offs at Central Department Store locations. (Schedule is available at front desk).

| We begin at the vast Aw Taw Kaw vegetable market this morning. Learn to identify Thai greens and fruits with our hotel chef, and we’ll also explain and sample typical snacks prior to returning to the hotel for a cooking class and lunch. We’ve requested typical central Thai dishes for today’s instruction, plus learn how to peel the grapefruit-like pomello, and also watch a demonstration of look chub, which resembles beautiful marzipan fruit pieces. After lunch, you’re free for personal sight-seeing. We've supplied you with a list of Bangkok’s top restaurants, as well as a shopping guide. |

Don't miss the Siam Niramit theatre, which chronicles the history of Thailand in a most spectacular fashion. Just a year old, the theatre was built at a cost of $300 million, and the stage large enough to accommodate 3 elephants, streams and waterfalls, plus a cast of hundreds. This world class spectacular show lasts 80 minutes, and includes dinner and transport. You'll be picked up at 5:45 from the hotel, then taken to the Siam Niramit complex prior to the show. There's a life-size reproduction of Thai villages, showing regional architectural differences, plus demonstrations of traditional crafts. Showtime is 20:00/8 p.m., you'll return back to the hotel before 22:30/10:30 p.m. |

| Bangkok was long renowned as the Venice of the East, and today we've chartered long boats to take us along the old pilgrimage klong passageways to the ancient city of Nakhon Pathom. The city is reputed to be 2500 years old, and its Phra Pathom Chedi is one of the largest pagodas in the world, and the most holy of all Buddhist structures in the kingdom. (It is from here that Buddhism spread in Thailand.) We’ll pass the royal barge museum, and its exquisite collection of royal regalia, then on to the thriving riverfront markets of Luam Paya and Don Kway, and Wat Suwarn. They are at their liveliest on weekends! Lunch en route. We'll taste Nakhon Pathom's local specialty khao laam sticky rice with coconut roasted in bamboo stalks, plus its famous sweet pork. |
In the early evening Phra Pathom Chedi transforms into a vibrant market, and the most famous vendor serves -- literally -- flying ice cream. Your catch… For dinner, we finish at nearby Nakhon Chaisi (which, coincidentally, is the former name of Nakhon Phatom.) Its lifestyle has hardly changed with time, an intriguing glimpse of old-style rural life. But the riverfront market pulses every evening -- especially on weekends -- with Bangkok day travellers. And nary a foreign tourist in sight! A great ending to our 10 days in Thaialnd! |
