| Speaking of screw-top wines: we're convinced that wines for immediate consumption benefit from screw tops. Claire Valley rieslings led the Australian ranks in screwing off, and there's now an avalanche of falling dominoes joining the screw top ranks Down Under. Even some of the country's pricey top tipplers are musing about changing over. And it's so convenient at a picnic when you've forgotten to pack a cork screw. Seems cork taints easily, let alone allows for a shocking percentage of bottles to turn well and truly corked. Heremetically-sealed screw tops prevent all of this, but it still feels a bit like pouring from a wine cask. And I will certainly miss the regard of subtly squeezing and smelling a cork. Not to mention all the waiter's friends out of work. But first, somebody has got to convince us that screw tops are indeed a great sealant for long-cellared wines.
